How cattle hides are recovered

Brine can cure a cowhide in about 24 hours, a job that once took 30 days in salted piles.

The short version

Cattle hide comes off the carcass at slaughter as a by-product of beef, and it starts to decompose within hours. Packers wash it in chilled water, flesh off fat and manure, and soak it for about a day in a paddle-stirred raceway of saturated brine. Then it is wrung, graded, bundled and shipped to a tanner.

  1. Pull the skin at slaughter

Cattle are rarely kept for their skins alone, so this crop arrives as a by-product of beef. Bacteria and enzymes start work within a few hours of the animal's death, and that sets the pace for everything after.

  2. Wash in chilled water

Skins tumble through a rotary screen under jets of chilled water. Much of the manure and blood rinses away, and the cold hardens the fat, which makes the next machine's job easier.

  3. Flesh off fat and manure

A heavy machine scrapes manure off the outer face and fat and flesh off the inner face in one pass. Brands and scores then show clearly for grading, and tanners stop paying freight on material of little use in leather. Some plants cure first and flesh afterward.

  4. Cure in a brine raceway

The usual tank is an oval vat with an island in the middle, about 8 feet wide and 5 feet deep. Two paddles keep skins circling in saturated brine, which pulls out water and stops bacteria. A popular 15,000-gallon tank holds about 550 at a time.

    about 24 hours in brine

  5. Wring and bundle

A wringing machine squeezes out brine as each skin leaves the tank, or it drains over a rack for 24 to 48 hours. Bundles are stored by grade until there is a carload. With a wringer, a cured bundle can be ready to ship the day after slaughter.

Worth repeating

  • Cattle hides account for about 65% of world leather production.
  • Rawhide is more sensitive to water than leather and softens and stretches quickly if left wet.
  • Salt crystals alone cannot cure a skin: they first have to dissolve in water, which is why even dry-salted piles rely on the skin's own moisture to make brine.
