How gelatin dessert is made

Jelly was once a status symbol, because getting gelatin out of calves' feet took a large kitchen staff.

The short version

Gelatin dessert is made by dissolving gelatin in hot water with sugar, flavoring and acids, then chilling the liquid until it sets into a soft elastic gel. Factories sell it as a premixed dry powder or block. The gelatin itself is processed collagen from animal skin and bones.

  1. Blend the dry mix

Gelatin is combined with sweetener, flavoring and food coloring. Acids and salts such as adipic acid, fumaric acid and sodium citrate are included in commercial blends to adjust tartness.

  2. Pack powder or blocks

The blend is sold as a loose powder or as a block divided into small squares. Both are meant to dissolve fully in hot water.

  3. Dissolve in hot water

The mix is stirred into hot water until every granule is dissolved. Sprinkling the powder into liquid several minutes before heating, called blooming, helps it dissolve.

  4. Pour into molds

The warm liquid is poured into decorative molds. Layers of different colors can be built up one on another, each set before the next goes in.

  5. Chill until it sets

The molds go into the refrigerator. As the liquid cools the dissolved protein strands tangle into a network that holds the water in place, and the gel melts back to a thick liquid if it warms up.

Worth repeating

  • Before gelatin was sold ready-made, jelly meant calf's foot jelly, and having it showed that a household had a big kitchen staff.
  • The United States federal government does not classify gelatin dessert as a meat product, because the collagen is processed so extensively.
  • Hannah Glasse was the first to record jelly in trifle, in her 1747 book The Art of Cookery.
