The short version

Sugar beet is a temperate crop with a fleshy white taproot that stores the sugar made in its leaves. It is planted in spring and lifted from the ground in autumn. Cool nights and long days make sweeter roots, and a machine now does the lifting that once needed a large crew with hoes.

  1. Sow in rich, level soil

Sugar beet wants deep, well-drained soil full of nutrients and humus, ideally a sandy loam. It needs to be cultivated 30 to 38 cm deep, and without irrigation it needs around 460 mm of rain.

  2. Thin and weed

Until the second half of the twentieth century, farmers planted densely to control weeds and then thinned the plants by hoe two or three times a season. The work was highly labor-intensive.

  3. Lift the roots

In most temperate climates beets go in during spring and come out in autumn. A plow-like device used to lift them behind a team of horses. Machines now do the lifting and the rest of the preparation that once took many hands.

Worth repeating

  • In 1747 Andreas Sigismund Marggraf isolated sugar from beetroots and found it at concentrations of 1.3 to 1.6%.
  • Sugar beets are grown in climates too cold for sugarcane.
  • Modern sugar beets date to the mid-18th century in Silesia, where Frederick the Great subsidized experiments in sugar extraction.
