The short version

Hot sauce starts with ripe chili peppers, ground into a mash the same day they are picked and salted. The mash is aged in barrels for up to three years in one classic recipe. Skins and seeds are strained out, vinegar is stirred in for a month, and the thin red liquid is bottled.

  1. Pick peppers at peak red

Pickers compare each pepper to a small red stick and take only the ones that match its color. Growers now farm the peppers in Central America, South America and Africa, with seed stock from Louisiana.

  2. Grind to a mash

Peppers are ground into a mash on the day they are harvested, before they start to spoil.

  3. Salt and barrel the mash

The mash goes into white oak barrels with salt. The barrels have been used for whiskey, and are decharred, torched and cleaned first so the mash does not pick up whiskey flavor.

  4. Age it in the warehouse

Barrels sit in warehouses while the mash slowly ferments and mellows. Many other sauces are simpler, with peppers pureed and cooked together with vinegar and salt.

  5. Strain off skins and seeds

The aged mash is pushed through a strainer that holds back skins and seeds. What passes through is a deep red pepper liquid.

  6. Stir in vinegar

Distilled vinegar goes into the liquid, which is stirred now and then for about a month. Vinegar is a natural preservative as well as a flavoring.

  7. Bottle the sauce

The sauce is filled into small glass bottles. One Louisiana factory fills as many as 720,000 two-ounce bottles in a day.

Worth repeating

  • One of the first bottled hot sauces sold in the United States appeared in Massachusetts in 1807.
  • The Tabasco brand dates from 1868 and is sold in more than 195 countries and territories.
  • Some hot sauces get extra heat from pure capsaicin extract, since even the hottest ghost peppers only go so far.
